The Pizza A La Romana aka Pizza al taglio, featured high water content comparing to the flower’s amount and the long fermentation time, 24 to 72 hours. The result is a light dough with a lot of air bubbles. Compared to the Neapolitan pizza, the al taglio Pizza is not baked directly on the oven’s stone, but in a tray.
Ingredients:
- ’00’ Flower: 550 gr
- Cold water: 440 ml
- Salt: 14 gr
- Fresh Yeast: 2.5 gr
- Olive Oil: 14 gr
- Honey: 5 gr

Making the Dough
- Mix the ’00’ flower and the yeast in a ball.
- Slowly add the cold water while kneading
- When the dough becomes firm, add the salt, oil and honey.
- Continue kneading till you’ll have a shiny firm dough.
- If you are using kneading machine, start with the slowest speed and increase it while kneading. anyway, pay attention, not to get to 27c as the yeast won’t work at higher temperature.
- Kneading time should be around 20 minutes,
- When done kneading, shape the dough into a ball and put it in a bowl for an hour (may be less in hot days)
- Fold the dough and put it in the fridge for the next 72 hours (or less, depends on much yeast you used)
- You may fold it again after few hours (and then, back to the fridge).
- Take it our of the refrigerator 3 hours before baking.
Shaping & baking your A La Romana Pizza
- Preheat the oven to 250c (top and bottom heaters).
- Brush the tray with some olive oil.
- Use your hands and fingers to spread the dough to your tray shape. start on a flat surface, using Semola flower to spread it, DO NOT squeeze the air out of the dough while spreading it.
- Carefully place the dough in the tray and spread it to the corners of the tray.
- Add your sauce/toppings and bake it for around 15 minutes (can be a little more or less, the best practice is to try and learn the exact times according to your oven and taste).
